Blueberry Coconut Sparkler
- ½ cup Tropic Isle Palms Coconut Rum
- 2 ½ cups ginger ale
- 3 T lemon juice
- 3 cups blueberries
- Coconut flakes and light corn syrup for garnish
Muddle the blueberries in the bottom of a medium bowl. Add the lemon juice and coconut rum; stir until well combined. Using a fine mesh strainer, strain the mixture and discard the blueberry skins. Add the ginger ale and gently stir until combined. Garnish rims of glasses with corn syrup and coconut flakes if desired. Fill glasses with ice and add the drink. Enjoy!
